Is there any way to make sure my webpages are centered in various browsers and screens? I notice some websites merely place their pages all the way to the left of the screen ... is this to make sure all the pages fit in everyone's screens?

Depends on how you build your site.
If you build using tables, you can center the entire table, like done on my samisite.com home page. That table is built to fit 800x600, and will center on any other page.
Some people prefer to left load so content will fit on all pages.

Just a personal preference.
